Hi friends! Happy Monday! I got received several requests last week for the egg cup recipe that I made and I wanted to share with you how I make them. They are suuuuper easy and such a great way to get your eggs in. These are great for on the go or to meal prep for the week. We enjoy eating them with bacon, spinach, peppers, cheese, onions, you can add about anything to them!
Here is how I make them:
-3 or 4 (or more) eggs depending on how many you are wanting to make normally 4 eggs makes one muffin tin batch for us
-1 cup of milk
-1 package of bacon
-salt & pepper to taste
-Topping options: ham, peppers, onions, tomatoes, spinach, mushrooms, sausage etc.
-Avocado oil spray
-Use avocado oil to spray your muffin tin, making sure every cup is completely covered
-Then, wrap one piece of your bacon around each muffin tin/cup.
-Use a mixing bowl to add your eggs, milk, add salt & pepper and beat this mixture very well
-Next, pour the egg mixture into each muffin cup, keeping your piece of bacon still wrapped around the outside of the tin cup
-Once the egg mixture is added, you can then go in and add your toppings such as cheese or sausage etc
-bake these at 375 until golden brown and take out and let cool
